Thus, waxy starches, which contain only amylopectin, lack the ability to form strong gel networks, but are nevertheless capable of generating highly viscous solutions over time at starch levels above the overlap concentration via the development of weak intermolecular associations.

Upon cooling below the transition temperature, polysaccharide molecules are again able to regain their respective ordered secondary and/or tertiary arrangements.
